Hi! My name is Emily and I am the creator of Greens, Eggs & Hamstrings! I am originally from Vancouver, Canada, but I moved to Dublin, Ireland in 2009 with my husband, Matt, after we got married. Matt is attending medical school here and I am entering my final year of college to become a physiotherapist! Here you will find a collection of my favourite recipes, my fitness experiences including training for my first marathon, and stories about traveling and living in Ireland. I created Greens, Eggs & Hamstrings to combine my passions for healthy food and fitness – but Matt actually came up with the name of the blog! We used to go on house-boating family vacations with Matt’s family and his mom would ask us to choose one meal to make during the trip. We chose green eggs & ham!
I like to think that we have come a long way in our meal selections since then. When we first moved to Ireland, I was able to secure a part-time job teaching swimming lessons while Matt started his first year of medical school. As you can imagine, I had a lot of free time on my hands because we didn’t know a single person, and Matt was always busy studying. Although I grew up baking with my dad, (a very talented baker who imparted his skills to me), I did not have a lot of experience with cooking full meals. I decided to use my free time to experiment with new recipes and this soon became one of my favourite things to do!
