I’ve made these coconut cupcakes a few times now and they are always a hit! I regularly get requests for them. I made them especially for my Dad’s birthday this year because he loves coconut. They are based on the Coconut & Pineapple cupcake recipe from the Hummingbird Bakery Cookbook – one of my favourite baking books! The recipes always turn out great and use surprisingly small amounts of butter and oil; however, I usually reduce the sugar a little bit. These cupcakes are in no way healthy – but they are easily lightened up if you use light coconut milk and light cream cheese. A perfect birthday treat!

Coconut Cupcakes

Prep Time: 20 minutes

Cook Time: 20-25 minutes

 Ingredients (9 cupcakes)

    For the Cake

    • 1 cup of All-Purpose Flour
    • 2/3 cup of White Sugar
    • 1.5 teaspoons of Baking Powder
    • 1/4 teaspoon of Salt
    • 1/4 cup of Butter or Margarine or Dairy-free Butter
    • 1/2 cup of Coconut Milk (Light Coconut Milk also works well)
    • 1/2 teaspoon of vanilla extract
    • 1 medium egg

    For the Frosting

    • 1 package (8 ounces) of Cream Cheese (Light also works)
    • 1/4 cup of Butter/Margarine/Dairy-free Butter
    • 1 cup of Icing sugar
    • 1 teaspoon of vanilla extract
    • Dessicated coconut for decorating (optional)

    Instructions

    For the Cake

    Preheat the oven to 325 degrees F.

    Cream together the sugar, butter, egg and vanilla extract.

    Combine the flour, baking powder and salt in a separate bowl.

    Add the dry ingredients to the wet and mix until well combined.

    Beat in the coconut milk.

    Divide batter between cupcake cases and fill each only 2/3 full.

    Bake for 20-25 minutes or until a knife inserted comes out clean.

    For the Frosting

    Cream together the cream cheese and butter. Mix in the vanilla extract and carefully beat in the icing sugar. Store in the fridge until the cupcakes are cool. Ice each cupcake and top with dessicated coconut.

    My sister’s boyfriend, Baptiste, was visiting from France at the time and these cupcakes were the first cupcakes he had ever had in his life! Can you believe it?

    I think he liked them.
